Roasted Broccoli with parmesan


This recipe was told to me by farm assistant manager Michelle. It is adaptable and should be viewed as a guideline. It is delicious. Enjoy!

2 large heads broccoli, chopped
2 garlic cloves, thinly sliced
2-3 T. olive oil
3/4 teaspoons sea salt
1/4 teaspoon  black pepper
1 tablespoons freshly squeezed lemon juice
3 T. grated Parmesan cheese
Optional additions (lemon zest, chopped basil or parsley, toasted bread crumbs)

Preheat the oven to 400 degrees F. Toss the broccoli with the olive oil and garlic. Spread this on a baking sheet or 9 by 13 casserole dish and roast for about 15 - 20 minutes, stirring once or twice, until just beginning to brown at the edges. Place roasted broccoli and garlic in serving bowl and add the lemon juice, parmesan, salt and pepper, and any optional additions. Serve.
